Conger eel with cider


• 4 Conger eel steaks (approx 100gm)
• 2 tablespoon olive oil
• 1 onion, chopped
• flour for coating
• cider
• salt and pepper
• thyme
• parsley
• a bay leaf
• 4 sliced eating apples


1. Heat oven to 400F/200C Gas mark6
2. Heat the olive oil in a pan and cook onions until soft
3. Coat the fish steaks in flour, add to the pan, browning quickly on both sides
4. Place the fish steaks in an ovenproof dish, pour sufficient cider to come half way up the steak, (at this stage you may indulge in a glass whilst cooking). Season with salt and pepper, add thyme, parsley and bay leaf
5. Bake for 15 - 20 minutes , basting halfway through
6. Serve with sliced apple which has been gently fried in a little butter, and some vegetables.
