Lemon and garlic infused salmon/sea trout with spiced roasted vegetables

Ingredients

Salmon / sea trout

Lemon juice

Black pepper

Crushed garlic

Onion

Peppers

Courgettes

Cherry tomatoes 

1/2 tsp celery salt

1/2 tsp ground cumin

1/2 tsp smoked paprika

1/2 tsp garlic salt

Salt / pepper

Olive oil

Wholegrain rice


Method

Marinate the salmon in lemon juice, black pepper and lots of crushed garlic for a few hours.

 

Roast veg (I used chopped onion, sliced peppers and courgettes and cherry tomatoes halved) in half a teaspoon each of celery salt, ground cumin, smoked paprika, garlic salt, salt and pepper and a glug of olive oil for about 40 mins on gas mark 6.

 

Cook up some wholegrain basmati rice (I used 100g for 2 people).

 

Pan fry salmon and when rice is cooked, drain and add roasted veg into it and mix through.

 

Serve rice mixture with salmon on top
