4 hake or any other white fish portions
1½ tablespoons (20ml) reduced-salt soya sauce
1 tablespoon grated fresh ginger
2 teaspoons (10ml) sesame oil
2 spring onions, thinly sliced
generous handful of fresh coriander
2 cloves garlic - crushed
1 red chilli, chopped
3 spring onions
2 tsp honey
Preheat the oven to 180°C.
Place the fish in the dish in a single layer.
Combine the soy sauce, ginger, chilli, spring onions, garlic, honey, half the coriander and sesame oil in a small bowl. Spoon the mixture over the fish. Can be left to marinade for a wee while too.
Bake for 8 to 10 minutes or until the fish is just cooked through. Sprinkle the remaining coriander over the top to serve.
Serve with noodles, rice, or simply on its own as a light healthy lunch!
