1 ripe avocado, pitted
1 teaspoon minced fresh tarragon
2 teaspoons lemon juice
2 ounces fishbox cold smoked salmon
24 melba toasts, toasted
red onion, lemon zest, cherry tomato for garnish
Mash avocado with lemon juice and tarragon in a bowl.
Spread about 1 teaspoon of the mixture on each piece of bread (or toast).
Top with salmon and sprinkle with salt.
Garnish as desired.
Would work jsut as well with smoked trout, these are also great with poached egg
