Ginger-Glazed Salmon with Charred Broccoli

The flavours of the slightly sweet salmon and charred broccoli  match perfectly. Enjoy this as a family meal or as a treat with friends.

Ingredients

  •  4 x 130g salmon fillets
  •  1 large broccoli head
  •  2 tbsp olive oil
  •  2 tbsp clear honey
  •  1 lemon (juiced)
  •  1 garlic clove (crushed)
  •  1 tsp ginger (crushed)
  •  2 spring onions (thinly sliced)
  •  Salt and pepper (to taste)

Method

  1. Chop the broccoli into florets and place them in a bowl.
  2. Drizzle with 1 tbsp olive oil, season with salt and pepper and set aside.
  3. Put the honey, lemon juice, garlic and ginger in a separate bowl and mix into a glaze.
  4. Rinse the salmon and pat it dry with kitchen roll.
  5. Drizzle the salmon with the remaining olive oil and season with salt and pepper.
  6. Brush the salmon with the glaze.
  7. Heat a griddle pan to a medium heat.
  8. Cook the broccoli in the griddle pan for approximately 2-3 minutes on each side, until it is charred (not burnt).
  9. Remove the broccoli from the pan and add the salmon to the pan.
  10. Sear the salmon for approximately 4 minutes on each side.
  11. Serve the salmon with the charred broccoli and additional glaze, as required.

For an extra fiery kick add cayenne pepper to the glaze mix or wasabi paste.
