Rainbow Trout with a Bacon Crust

  •  4 x 140g rainbow trout fillets
  •  2 rashers streaky bacon
  •  2 sprigs thyme
  •  1 lemon, zested and cut into quarters
  •  50g fresh breadcrumbs
  •  2 tbsp olive oil


























  1.  Heat oven to 220°C.
  2.  Zest the lemon and then cut it into quarters.
  3.  Finely chop the bacon, then mix together with the thyme, lemon zest and breadcrumbs.
  4.  Place the rainbow trout fillets in a lightly oiled baking dish, then sprinkle a quarter of the breadcrumb mixture over each fillet.
  5.  Arrange the lemon wedges around the fish and drizzle with the oil.
  6.  Roast the rainbow trout fillets for 8 to 10 minutes, until they are cooked through, they flake easily and the topping is golden.
  7.  Serve with steamed vegetables and boiled new potatoes.
