Salmon and Ginger Fish Cakes and Sweet Potato Chips

Absolutely delicious. A meal that the whole family will enjoy!

Ingredients

  •  2 x 130g salmon fillets (skinless)
  •  1 large sweet potato
  •  4 tsp olive oil
  •  10g ginger (grated)
  •  Zest of 1 lime
  •  1 lime cut into wedges
  •  50g spring onions (finely chopped)
  •  2tbsp mayonnaise mixed with wasabi (optional)
  •  Salt and pepper

Method

  1.  Heat oven to 200°C.
  2.  Cut the sweet potato into chips.
  3.  Toss the chips in a roasting tin with 1 teaspoon of oil.
  4.  Season and bake for 20-25 minutes in the oven.
  5.  Chop the salmon as finely as you can and place it in a bowl with the ginger, lime zest and seasoning.
  6.  Heat 1 teaspoon of oil in a non-stick pan and soften the spring onions for
    2 minutes.
  7.  Stir the spring onions into the salmon, mix well and shape into 4 patties.
  8.  Heat the remaining oil in the pan and cook the patties for 3-4 minutes each side until golden and cooked through.
  9.  Cover with a lid and leave to rest for a few minutes.
  10.  Serve 2 patties each with the chips, mayonnaise and lime wedges.
