2 Fishbox Herring/Mackerel fillets
For the dressing
1 lime
1 tbsp groundnut oil
Tsp soy sauce
A handful of coriander leaves
For the noodles
1 tbsp groundnut oil
1 clove garlic chopped
1 green chilli chopped
1 thumb size piece ginger grated
Small red onion or 3 spring onions
A handful of stir fry veg - courgette/peppers/sugar snap peas
1 tsp Thai green curry paste
1 tsp soy sauce
1 tsp fish sauce
Straight to wok noodles or normal noodles
For the garnish
Fresh lime slices and coriander leaves
Mix all the dressing ingredients together and set aside.
Heat the grill to its hottest setting. Brush a small amount of groundnut oil on the skin side of the herring. Lay herring skin side up on grill tray.
Grill for 5-7 mins. Beware it will probably smoke, pop and crackle but will create great flavour!
For the noodles
(Cook the noodles as per pack instructions and add at the end of the recipe).
Heat the groundnut oil in the pan.
Add the garlic, ginger and chilli and fry for 2 mins. Add the onions and curry paste and fry for a few minutes. Add in the veg, soy sauce and fish sauce for 4-5 mins. Add your straight to wok noodles (you may need to add boiling water to prevent sticking) or cooked noodles to the pan and heat through.
Serve the fish on top of the noodles and pour your dressing over the fish then add your garnish. Enjoy!
