“This is a recipe I used for lunch feeding my (almost!) one year old"
3-4 shallots
Olive oil
Flour
Butter
Cheddar
1 pack smoked haddock
1 pack any white fish – eg tusk, haddock, forkbeard, cod, Pollock, ling.
Mashed Potatoes
Panko breadcrumbs (optional)
For the cheese sauce:
Gently fry 3-4 finely chopped shallots in olive oil until softened. Add 2 heaped spoonfuls of flour to the same amount of butter in the pot and heat gently together. Add milk to this to thin it out gradually until you get the consistency you want. Add as much grated mature cheddar as you like until it tastes how you like it.
Add the fish:
I added 1 pack of smoked haddock and 1 of any white fish cut into bite sized pieces.
Pour into an oven proof dish and cover with mashed potato
Finally sprinkle over grated mature cheddar cheese and panco breadcrumbs for a crunchy topping.
Pop in the oven for about 30 mins at 180.
