Scallops Wrapped in Bacon with Spicy Mayonnaise

A great little starter, suitable for any dinner party


Spicy Mayonnaise

  • 100g mayonnaise
  • 1 1/2 tablespoons ground chili paste
  • 1 medium lime (juiced)
  • 1 tablespoon corriander (finely chopped)


  • 16 scallops (rinsed and dried)
  • 8 rashers of thinly sliced bacon
  • large lettuce leaves (for serving)
  • sea salt and freshly ground black pepper (to taste)


  1. In a medium bowl, combine the mayonnaise, chilli paste, lime juice and corriander.
  2. Stir well, cover and refrigerate until ready to serve.
  3. Preheat your grill to a medium/high heat.
  4. Spray a rimmed baking sheet with nonstick spray.
  5. Wrap each scallop with a piece of bacon and secure with a wooden toothpick.
  6. Place the bacon-wrapped scallops onto the prepared baking sheet and season them with salt and pepper.
  7. Cook under the grill for about 10 minutes, or until the bacon is cooked through, turning once mid-way through.
  8. To serve, line a large platter with lettuce leaves and place the bacon-wrapped scallops on top.
  9. Serve with a dish of the spicy mayonnaise for dipping.
