Smoked Mackerel and Piccalilli Wrap

 A quick but satisfying lunch, with sharp piccalilli complementing the smoked mackerel perfectly.















  •  2 smoked mackerel fillets
  •  2 tortilla wraps
  •  1 sweet gem lettuce
  •  2 tbsp piccalilli
  •  ½ lemon


















  1.     Cut the smoked mackerel  fillets into thick strips.
  2.     Shred the lettuce.
  3.     Warm the smoked mackerel strips in a hot, dry frying pan for a few minutes, turning, until they are heated through.
  4.     Remove the smoked mackerel strips from the pan and keep warm.
  5.     Place the wraps, one at a time, into the frying pan and turn once until they are hot and take on a little colour.
  6. Place the wraps on a serving plate and put ½ of the smoked mackerel strips in the centre of each wrap.
  7. Spoon over the piccalilli, sprinkle with the shredded lettuce and add a  squeeze of lemon juice.
  8. Roll up the wraps and enjoy!
