Scotland has so many amazing small, craft distilleries you can choose your favourite gin to add to this pick a new one to try. Delicious and refreshing.
Ingredients
1kg mussels
30ml gin
150g cucumber
50ml tonic
15g fresh mint
1 lime (juiced and zested)
Method
Wash and de-beard the mussels.
Heat a saucepan to really hot, then add the mussels and tonic and place the lidon to allow the mussels to steam.
Cook for 2 minutes and, when nearly all of the mussels are open, add the gin.
Cook for 2 minutes.
Add the fresh mint, lime juice and zest and cucumber.
Serve with crusty bread and an ice cold glass of gin and tonic.
