Honey-Glazed Rock  Turbot

  • 2 x fillets of rock turbot
  • 1 lemon (finely zested and juiced)
  • 2 tbsp honey
  • 1 sprig of thyme (de-leafed and chopped)
  • 1 tbsp olive oil
  • Salt and pepper (to taste)

























  1.  Pre-heat oven to 240°C (very hot).
  2.  Mix together the honey, olive oil, lemon and thyme and spread all over the fish.
  3.  Place the fish on a heatproof mat, baking paper or oiled tin foil.
  4.  Season with salt and pepper and bake for approximately 4 minutes, or until it starts to go brown.
  5.  Serve with new potatoes, vegetables or salad.
