King Scallops with  Beetroot and Apple
Fishboxer Fish is the Dish from


  •  250g king scallops
  •  25g butter (softened)
  •  2 beetroot
  •  1 granny smith apple
  •  2 sprigs fresh dill
  •  1 lemon
  •  1 tbsp extra virgin olive oil
  •  Salt and pepper (to taste)






  1.  Juice the lemon
  2.  Peel and grate the beetroot.
  3.  Peel and cut half of the apple into small cubes and the other half into fine sticks.
  4.  Finely chop the dill.
  5.  Add the dill and apple cubes it to the grated beetroot.
  6.  Season with lemon juice, oil, salt and pepper (all to taste)
  7.  Heat a frying pan and, once extremely hot, add oil.
  8.  Place the scallops in the frying pan and cook for 30 seconds.
  9.  Turn them over and cook on the other side for approx. 30 seconds.
  10.  Season with salt and lemon juice (to taste).
  11.  Arrange some of the beetroot salad on a plate, top with scallops and finally top with the apple sticks.
