1 onion
4 garlic cloves
ginger
tin of chopped tomatoes
frozen peas
600ml veg stock
750g paella rice
2 tablespoons of oyster sauce
2 lemon
1tsp paprika
1tsp turmeric
Handful of fresh parsley
You'll need a big deep pot or a paella pan for this recipe. (Try using a couple of pans if you don't have one big one!)
Cook the onion, garlic and ginger in a hot pan with oil until they soften.
Add your rice and spices, stirring in 600ml of veg stock and oyster sauce. Add tinned tomatoes and peas.
Stir and cook for 10-15 mins. Chop your fish fillets into chunks.
Add all the fish and shellfish to the pan and turn the heat down. Add a lid, or if using a paella pan, put in the oven.
Let the paella cook for 20-25 mins or until the rice is nice and soft. Check seafood is cooked through.
Serve with wedges of lemon! Delicious!
