Mediterranean Lemon and Garlic Baked Cod

This recipe is so quick and easy to make and it is truly scrumptious!  Serve it with a side salad or with roasted Mediterranean vegetables and crushed new potatoes.

 

Ingredients

 

  •  4 x 130g cod portions
  •  2 - 4 garlic cloves (depending on your tastes)
  •  15g fresh parsley leaves
  •  2 lemons
  •  7 tbsp extra virgin olive oil
  •  2 tbsp butter
  •  45g plain flour
  •  1 tsp ground coriander
  •  ¾ tsp sweet Spanish paprika
  •  ¾ tsp ground cumin
  •  ¾ tsp salt
  •  ½ tsp black pepper

 

 


Method

  1.  Preheat oven to 200°C.
  2.  Juice the lemons and mince the garlic.
  3.  Rinse and pat the cod portions dry with some kitchen paper.
  4.  Mix the flour, coriander, paprika, cumin, salt and pepper together in a shallow bowl.
  5.  Melt the butter and mix it with 5 tablespoons of lemon juice and 5 tablespoons of olive oil in a separate shallow bowl.
  6.  Heat the remaining olive oil in a frying pan over a medium heat.
  7.  Dip each cod portion first in the lemon juice mixture, then the flour mixture, shaking off any excess flour.
  8.  Pop the cod portions into the pan and sear on each side for approximately one minute to add some colour.
  9.  Transfer the cod portions to a baking tray.
  10.  Add the minced garlic to the remaining lemon juice mixture, mix and drizzle over the cod portions.
  11.  Bake the cod portions in the oven for approximately 8 to 10 minutes.
  12.  Plate up the cod portions, sprinkle with chopped parsley and serve with a side of your choice.
