Pan Fried Squid with Chili and Rocket - Fishbox

• 200g of squid sliced

• 1 red chilli finely diced

• ½ a thumb of ginger

• 1 large clove of garlic

• 1 red onion sliced

• 1 lemon juiced

• 35ml sherry

• 2 large handfuls of washed rocket or mizuno

• 2 slices of sundried tomato bread (or plain will do) cut into cubes


In a hot pan with 2 tablespoons of olive oil, drop in your red onion chilli garlic and ginger and give it a good stir fry with a nice bit of colour, drop in the bread so it soaks up the oil and crisps it up then pop into a bowl and set aside.

Then while the pan is still hot add another tablespoon of olive oil and drop in your squid and stir fry on a nice high heat for about 2 min and no more.

Deglaze the pan with the lemon and sherry, add to the bowl with the onion mix and mix lightly with the rocket and cherry toms.
