Parmesan Cod

A satisfying meal that doesn't need much preparation and doesn't take long to cook.  Instead of cod why not try this recipe with coley, pollock or salmon.


  • 4 x 150g cod fillets
  • 50g parmesan cheese
  • 25g butter (softened)
  • 2 tbsp mayonnaise
  • 1 tbsp lemon juice
  • 1/4 tsp dried basil
  • 1/4 tsp ground black pepper
  • 1/4 tsp salt
  • 200g cherry tomatoes


  1. Preheat the grill.
  2. Grease a grill pan or line it with aluminium foil.
  3. Mix together the Parmesan, butter, mayonnaise and lemon juice
  4. Season with the dried basil, pepper and salt, mix well and set aside.
  5. Arrange the cod fillets in a single layer on the prepared grill pan.
  6. Grill a few inches from the heat for 2 to 3 minutes.
  7. Turn the fillets over and grill for another 2 to 3 minutes.
  8. Remove the fillets from the oven and top them with the Parmesan mixture and the cherry tomatoes.
  9. Grill for 2 minutes or until the topping is browned and the fish flakes easily with a fork. Be careful not to over cook the fish.
