Sweet & Sour Balti Fish - Fishbox

Ingredients

Any white fish fillet :

Cod, Monk, Tusk, Haddock, Pollock

Mix in Prawns and Veg to make it your own

70g tomato paste

2 tbsp greek-style yoghurt 

1 1/2 tsp garam masala 

1 tsp ground chili

2 garlic cloves, crushed

2 tbsp mango chutney 

1 tsp salt

1/2 tsp caster sugar

2 tbsp vegetable oil

2 tbsp sour cream

2 tbsp chopped coriander 

1/2 onion

jasmine rice


Method

Combine tomato paste, yoghurt, garam masala, chili, garlic, mango chutney, salt and sugar in a bowl.

Heat oil in a pan on medium-low. Fry onions if using.

Cook tomato mixture, stirring for 2 minutes until thickened slightly.

Add fish and stir until well coated. Add 50 - 100 ml of water and simmer for 15 minutes, ensuring fish is cooked through.

Stir in sour cream and some chopped coriander.

Serve with rice, a sprinkle of coriander and a cheeky dollop of mango chutney if you like.
