With lemon and balsamic glaze
If you have received scallops in their shell, shuck them carefully with a knife, and then fry the meat in butter with lots of seasoning.
Grill your black pudding.
Cut your apple into chunks and fry in the butter with the scallops
Scoop and slice your avocado
Put a big pile of rocket leaves on your plate
Crumble over the black pudding, apple and avocado
Smother with lemon and balsamic glaze
Add pepper if needed.
