Ultimate Sharing Scallops Salad

Ultimate sharing platter of pan-seared scallops, black pudding, avocado, rocket and apple.


  • 180g scallops
  • 120g rocket
  • 100g black pudding
  • 1 avocado
  • 1 apple
  • Juice of 1/2 lemon
  • 100ml balsamic glaze
  • 20g butter
  • salt and pepper (to taste)


  1. Turn on the grill to a medium/high heat.
  2. Grill the black pudding for 3 to 5 minutes on both sides.
  3. If you have received scallops in their shell, shuck them carefully with a knife.
  4. Cut the apple into bite-sized chunks.
  5. Melt the butter in a heavy-based frying pan, over a medium heat.
  6. Season the scallops well.
  7. Once the butter begins to froth, fry the scallop meat and the apple for 2 to 3 minutes on both sides.
  8. Cut the avocado in half.
  9. Scoop out and slice the avocado flesh.  
  10. Lay a generous pile of rocket leaves on a plate.
  11. Crumble over the black pudding, apple and avocado.
  12. In a dish suitable for pouring, combine the balsamic glaze and lemon juice.
  13. Lightly glaze everything with the mixture.
  14. Season to taste.
  15. Serve and enjoy.
