"This is a Middle Eastern style Za’atar Cod recipe which I often serve with a Tabouleh Salad"
Cod portions x 2
1 clove garlic
Bunch of parsley
Za'atar herb mix (enough to cover the fish)
1. Sprinkle salt and pepper on the cod then crush or finely chop the clove of garlic and spread over the fish.
2. Next sprinkle Za'atar herb mix generously over the cod and finely chop a small handful of parsley and sprinkle on top.
3. Grate a small amount of lemon rind onto the fish and lightly squeeze a little lemon juice over it.
4. To finish drizzle a little olive oil over the top and place in a preheated oven at 180 degrees for 15 minutes.
I served this with a roasted sweet potato, parsley, tomato and pomegranate salad with a honey balsamic dressing.
