Roasted Cod with  Champagne and Honey

This dish is quick to make but will always impress!

 

 

Ingredients

  •  2 x 130g cod portions (skin on)
  •  50g butter
  •  140g Japanese mirin
  •  200ml Champagne
  •  A pinch of salt
  •  20g flour
  •  2 tbsp soy sauce
  •  1 tbsp honey
  •  100g spring onions
  •  Green vegetables e.g. asparagus, green beans, broccoli etc

 

 

 


Method

  1.  Preheat the oven to 180°C.
  2.  Brush the cod portions with the soy sauce.
  3.  Clean the spring onions and then arrange them on a baking tray.
  4.  Place the cod portions on top of the spring onions.
  5.  Bake the cod portions in the oven for approximately 12 minutes, until they are cooked through.
  6.  Place the butter and Japanese mirin in a saucepan and gently heat until the butter is melted.
  7.  Add the Champagne and salt to the pan and bring to the boil.
  8.  Add the flour to the pan and whisk until smooth.
  9.  Steam the green vegetables for approximately 3 to 5 minutes, until
    al dente.
  10.  Preheat the grill to hot.
  11.  Take the cod portions out of the oven and brush them with the honey.
  12.  Place them under the hot grill until the cod portions turn golden brown.
  13.  Place fish on the plate and pour over the champagne sauce.  Serve with the green vegetables on the side.
